Simple Comfort Soup
Add chicken legs to the boiling water. Cover the pot and allow to boil for 30 minutes.
Remove chicken from boiling water and debone.
Cut chicken into bite-sized pieces and add back to the boiling water.
Heat wok and add oil and salt.
Add celery and leeks to the wok and saute for 2 minutes.
Add vegetable mixture to the pot of boiling water.
Add 1 teaspoon of mushroom powder, or fresh mushrooms.
Allow flavors to mix for 5 minutes.
Add spinach and pepper, or any additional veggies your system is craving.
Adjust taste with any additional spices that call to you. Miso is an excellent addition here.
Note: You can add noodle to this mixture or leftover rice.
*If you choose not to use chicken, simply boil water and follow the directions starting with "heat wok."
